Combine first 6 ingredients in a large bowl; make a well in center of mixture. Combine eggs and next 3 ingredients; add to dry ingredients, stirring just until moistened. Bake immediately, or cover batter and store in refrigerator up to 1 week.
Preheat oven to 400 degrees, F. Spoon batter into greased muffin pans, filling two-thirds full.
Bake at 400 degrees for 17-20 minutes. Remove from pans immediately.
