2 – 3 oz. pkgs. Lemon flavored Jell-O
2 c. boiling water
1 ½ c. mini marshmallows
1 can crushed pineapple with juice
½ c. chopped nuts
2 lg. yellow Delicious apples, peeled and chopped fine
2 c. Cool Whip
Dissolve Jell-O in hot water. Stir in marshmallows until melted (this takes a little time, so be patient). Add pineapple, nuts and apples. Refrigerate.
Topping: ½ c. sugar, 3-4 t. lemon juice, 2 eggs well beaten.
Put in heavy pan cook and stir until thick over low heat. Cool completely and fold in 2 c. Cool Whip. Blend well and spread over Jell-O. Refrigerate.
