German Potato Salad

 

5 lbs potatoes

2 t salt

1 lg onion, chopped

1 lb bacon, fried crisp and drained well

¾ c. mayonnaise

½ c cider vinegar

½ c vegetable oil

½ c. water

½ c sugar
Boil potatoes with skins on till soft.  Drain water and rinse with cold water while removing the skins.  Slice potatoes and layer in bowl.  Add chopped onions and salt.  Mix gently.  Hear vinegar, oil, water and sugar just till sugar is dissolved.  Pour over potatoes while still warm.  Gently stir in mayonnaise.  Sprinkle crumbled bacon on top.  Serve immediately.
