Basic Biscuits

2 c. sifter self-rising flour
¼ c. shortening
Approx. ¾ c. milk
Preheat oven to 450° F. In large bowl, cut shortening into flour until mixture resembles coarse crumbs.  With a fork, stir in enough milk to form a soft dough or until dough pulls away from sides of bowl.  Turn dough onto lightly floured board of pastry cloth.  Knead just until smooth.  Roll dough to ½ inch thickness and cut with floured 2-0inch round cutter.  Place biscuits, lightly touching, on ungreased baking sheet.  Bake for 10-12 minutes or until golden brown.  Yields 12 – 14 biscuits.
